Während ihrer einjährigen BAU Residency erforscht die Künstlerin Grace Gloria Denis die antike Weizensorte Binkel in Südtirol. Neben einem dialogischen Austausch mit Wissenschaftler:innen, Bäuer:innen und Bäcker:innen sieht sie das Brot und den Akt des Backens als Impulsgeber, um die nicht-menschliche Akteure in ihre Recherche miteinzubeziehen.
.Am Donnerstag 24. Oktober um 18 Uhr lädt BAU zu Aural Oral: Tracing Binkel in der Caldera in Algund ein. In dem von uns temporär bespielten Gewächshaus, gibt es eine öffentliche Präsentation des Residency Projektes.
Der Abend ist von der Künstlerin Grace Gloria Denis mit dem Bäcker Ivo de Pellegrin (Forno) inszeniert und lädt zum gemeinsamen Backen, Schmecken und Hören ein. Gemeinsam begeben wir uns auf die Spuren von Binkel, einer einst in Südtirol weit verbreitete Getreidesorte.
Binkel, oder Triticum compactum, ist eine der vielen lokalen Getreidesorten, die durch die Industrialisierung in der Landwirtschaft und Ausbreitung der Apfelmonokultur vom Aussterben bedroht sind. Ein Netzwerk um Wissenschaftler:innen, Bäuer:innen und Bäcker:innen ist bemüht diese antike Getreidesorte wieder in Südtirol einzuführen. Um diese Wiedereinführung des Binkels in Südtirol visuell und auditiv nachzuzeichnen, arbeitet die Künstlerin mit Tonaufnahmen der Binkelverarbeitung. Die Aufnahmen von der Aussaat bis zur Verarbeitung zu Brot werden in Form einer Soundarbeit hörbar werden. Gleichzeitig spekuliert Grace Gloria Denis in dieser Ausgabe von Aural Oral über die unsichtbaren mikrobiellen Elemente, die von Bäckern beschworen werden, und über das subtile, aber unabdingbare verkörperte Wissen, das in die Arbeit eines Bäckers eingeflochten ist.
Aural Oral ist Teil einer Projektreihe, welche die Künstlerin bereits 2017 initiiert hat und mit „Tracing Binkel“ erstmals in Italien durchführt. Die künstlerische Arbeit erzählt von ortspezifischen Recherchen, die auf die Wahrnehmung unserer Sinne stoßen und uns anregen sollen über Prozesse des landwirtschaftlichen Anbaus und des Konsums nachzudenken. Durch Mikrofon- und Feldaufnahmen wird eine akustische Kartografie von Orten der Lebensmittelproduktion entworfen. Anlehnend an die akustische Forschung von Steven Feld, schlägt die Künstlerin durch Aural Oral eine Erkundung von Lebensmittelsystemen über das Hören und Schmecken vor
Für BAU bildet Aural Oral: Tracing Binkel den Auftakt einer einjährigen Auseinandersetzung mit Getreide in der Caldera. Vertieft wird dies durch ein ästhetisches Forschungsprojekt mit der Grundschule Algund, das in Zusammenarbeit mit dem Biobauer Daniele Piscopiello während des Schuljahres 2024/2025 umgesetzt wird.
Die Künstlerin Grace Gloria Denis (1990* Los Angeles, lebt und arbeitet in Spanien und der Schweiz) verschränkt in ihrer Arbeit landwirtschaftliche Forschung mit interaktiven Installationen, die essbare Materialien und Klang miteinander verweben, um einen gemeinschaftlichen und Genuss-basierten Ansatz für eine kritische Auseinandersetzung mit Essen vorzuschlagen. During her one-year BAU residency, the artist Grace Gloria Denis has explored bread as a vector for liaising with the non-human while collaborating with bakers and scientists in South Tyrol whose practices deal with the ancient wheat variety “Binkel” (club wheat).
On Thursday 24 October at 6 pm, we invite you to Aural Oral: Tracing Binkel, the public presentation of the residency at Caldera.
The evening is orchestrated by the artist Grace Gloria Denis with the baker Ivo de Pellegrin from Forno and invites you to bake, taste and listen together. Together we will follow in the traces of “Binkel” a type of grain that was once widespread in Alto Adige / Südtirol.
Binkel, or triticum compactum, is one of the multitude of local grains that verged on extinction due to the onslaught of industrialization perpetuated by the arrival of apple monoculture. In order to trace the reintroduction of Binkel in South Tyrol, which has been driven by scientific research in collaboration with farmers and bakers in recent years, the artist works with sound recordings of Binkel processing. The recordings from sowing to processing into bread will become audible in the form of a sound work. Considering bread as a catalyst for valorising non-human agency, her residency simultaneously speculated upon the invisible microbial realms invoked by bakers and the subtle yet imperative embodied knowledge interwoven into the work of a baker.
Aural Oral is part of a series of projects that the artist initiated back in 2017 and is realising for the first time in Italy with ‘Tracing Binkel’. The artistic work tells of site-specific research that encounters the perception of our senses and is intended to encourage us to think about processes of agricultural cultivation and consumption.
Through various microphones and field recordings a sonic cartography of sites of food production is sketched, proposing a multi-sensorial approach to food systems traversing beyond the domain of the gustatory.
For BAU, Aural Oral: Tracing Binkel marks the start of a year-long exploration of grain in the Caldera. This will be deepened by an aesthetic research project with the Lagundo primary school, which will be realised in collaboration with organic farmer Daniele Piscopiello during the 2024/2025 school year.
Grace Gloria Denis’ (*1990 USA, lives and works between Spain and Switzerland) work converges agricultural research with interactive installation, braiding together edible matter and sound to propose a convivial and comestible approach to critical inquiry. Durante la BAU Residency del 2024, l’artista Grace Gloria Denis in dialogo con panettieri, agricoltori e vari scienziati in Alto Adige che lavorano con il grano antico “Binkel” (grano compatto) ha condotto una ricerca sul pane come fonte di ispirazione per riflettere sulla valorizzazione dell’azione non umana.
Giovedì 24 ottobre alle 18.00, vi invitiamo ad Aural Oral: Tracing Binkel, la presentazione della residenza, alla Caldera di Lagundo.
La serata è orchestrata dall’artista Grace Gloria Denis con il panettiere Ivo de Pellegrin di Forno e vi invita a fare il pane, a degustare e ascoltare insieme. Assieme seguiremo le tracce del “Binkel”, un tipo di grano un tempo diffuso in Alto Adige / Südtirol.
Il “Binkel”, o Triticum compactum, è una delle tante varietà di cereali locali a rischio di estinzione a causa dell’industrializzazione dell’agricoltura e della diffusione della monocoltura delle mele. Per ripercorrere la reintroduzione del “Binkel” in Alto Adige, guidata negli ultimi anni da ricerche scientifiche in collaborazione con agricoltori ed agricultrici e panificatori, l’artista lavora con registrazioni sonore della lavorazione di tale grano antico. Le registrazioni, dalla semina alla trasformazione in pane, diventeranno udibili sotto forma di opera sonora.. Allo stesso tempo, in questa edizione di Aural Oral, Grace Gloria Denis specula sugli elementi microbici invisibili invocati dai panettieri e sulla sottile ma indispensabile conoscenza incorporata che è intessuta nel lavoro di un panettiere.
Aural Oral fa parte di una serie di progetti che l’artista ha avviato nel 2017 e che sta realizzando per la prima volta in Italia con “Tracing Binkel”. L’opera artistica racconta di una ricerca site-specific che incontra la percezione dei nostri sensi e intende sollecitare una riflessione sui processi di coltivazione e consumo agricolo. Microfoni e registrazioni sul campo sono utilizzati per creare una cartografia acustica dei siti di produzione alimentare. Ispirandosi alla ricerca acustica di Steven Feld, con Aural Oral l’artista propone un’esplorazione dei sistemi alimentari attraverso l’udito e la degustazione.
Per BAU, Aural Oral: Tracing Binkel segna l’inizio di un anno di esplorazione del grano nella Caldera. Questa sarà approfondita da un progetto di ricerca estetica con la scuola elementare di Lagundo, che sarà realizzato in collaborazione con l’agricoltore biologico Daniele Piscopiello durante l’anno scolastico 2024/2025
Il lavoro di Grace Gloria Denis (*1990 USA, vive e lavora tra Spagna e Svizzera) fa convergere la ricerca agricola con l’installazione interattiva, intrecciando materia commestibile e suono per proporre un approccio conviviale e commestibile all’indagine critica.
